Silvasheep's base camp is at Dunthrop, a 500ha farm in the Cotswolds transitioning to regenerative practices. As well as ancient wooded park land, existing grassland and arable fields are converting to agroforestry. Sheep aren't new to this land. A medieval priory at Cold Norton was granted the right to pasture a flock at Dunthrop in the 12th century.
Being there in the great outdoors, sharing moments with friends and family, the best. Keeping active and healthy at any age is important as is having access to sustainable and nutritious home grown food. No-one should be left out. Climate change is a concern, for sure, but people are pioneering and can do miraculous things if they work together. Silvasheep was founded with that spirit in mind.
My family has been farming for three generations at Dunthrop. My grandfather was one of the pioneers in the early organic movement. Keeping farming, food security and the environment in a self supportive circle is one of the most important things to achieve today. We're hoping that the Silvasheep project will prove this for the benefit of all.
It's hard to beat time in the kitchen trying out new combinations and flavours. Food quality is the essence, where it comes from, how the animals, crops and the land have been treated. If something has been cared for you can see it in the field, in the ingredients, the food you prepare smells and tastes better. I want everything we produce at Silvasheep to be treated as if it's part of the family.
I established my first dairy sheep flock in Pembrokeshire – there are fantastic possibilities for sheep farming in Wales. The fields, valleys and climate already produce some of the best quality grass pasture anywhere in the world. My dream is to see Silvasheep working closely with Welsh farmers and local communities, introducing regenerative farming methods and agroforestry designs suited to the landscape, producing sustainable, locally sourced, and super nutritious food.
